One of the oldest DOP cheeses of Sicily, with a typical parallelepiped shape, thin and smooth rind, firm paste. Based on maturation, its scent ranges between herbaceous/floral and buttery. Its sapid and spicy taste includes the most genuine Sicily. Take out of the fridge about an hour before use.
Made with Sicilian cow’s milk, hand-processed with the help of utensils used in the old times. Its taste is given by the forage essences, in which the cattle grazes. Its aroma ranges from floral herbaceous to cooked milk, embracing one’s mouth, soft and sapid with a barely noticeable rind. Quantity and tasting are based on feelings.
