DESCRIZIONE

Made exclusively with cow’s milk from the Sicani Mountains. Ochre-yellow rind covered with black pepper, and straw yellow inner paste. The scent of cooked milk stands out with a sweet and slightly spicy flavour. The old recipe calls for abandonment – hence the name “persa” (lost) during the ripening process. The double fermentation comes back in the form of a unique taste.
