Fished with lampare, typical Cetarean boats that attract fish with light, the anchovies are processed within hours of being caught and, after cleaning and salting, are transferred to terzigni, small chestnut barrels. The savouriness given by the Western Mediterranean seabed, the bright colour and delicate flavour of these fillets make them a precious gift from the sea.
